Moringa Chia Pudding
A healthy and nutritious snack for the holidays!
YIELD: 4 servings
3/4 cup(175ml) chia seeds
2 cups (500 ml) original soy beverage, unsweetened
1 tbsp (15 ml) maple syrup
1 tbsp (30ml) moringa powder
1 banana, cut into thin slices
1/2 cup (125ml) vanilla yogurt
1 cup (250 ml) fresh or frozen pineapple, cubes
1. In a bowl, mix the chia, soy beverage, maple syrup and moringa powder in until the chia seeds are well dispersed in the liquid.
2. Let stand for 10 minutes, then stir again.
3. Add the bananas to the top of the pudding, pressing lightly so that they fall into the chia mixture.
4. Cover and refriegerate overnight, or at least 4 hours.
Serve in glasses, taking care to spread the yogourt and fresh pineapple on top.
